Oh no! Unfortunately, there's not that much you can really do here. Quickly spoon it out of the melted chocolate before it falls apart & ruins the rest of your chocolate. On the plus side, now you have something to snack on!
There's a few reasons why this may happen:
- When you stir or swirl your cake pop in the melted chocolate - instead tilt the cake pop & container in one direction and then in the opposite way.
- If your melted chocolate is too thick & weighs down the cake ball. In this case, you should thin it out, see here.
- If your cake balls are too big
- Tapping off the excess chocolate too vigorously.
Air bubbles usually appear when you stir your melted chocolate too fast. To get rid of them, stir in a paddle motion (ie. press spoon against the side of bowl & slowly move from left to right.). Tapping the bowl of melted chocolate on the surface will help to pop them also.
This tends to happen when your cake pops are still too cold before dipping. When they warm up to room temp., they expand a little. Allow the remaining cake pops to sit for another a 2-5 mins before dipping. With your cracked cake pop, wait until it has harden and just dip it again!
This can happen when there is too much oil in your cake ball mixture or if there are air bubbles in the chocolate. Just wipe the residue off & seal up any holes with a bit of melted chocolate.
There's still a tad too much melted chocolate on your cake pop. Don't worry, just wipe off the excess with your finger.
